What I Eat in a Day: WW Freestyle Part 7
I’m back aqain to share with you all the delectable, healthy food I’ve been munching on lately. Now you guys know I’ve been on and off of my WW Freestyle plan for about a year now. I’ve been slacking a bit lately, such is life… but I’m back on my shit! This body is gonna be in a cheeky bikini at a pool party in Vegas pretty soon so we gotta get it right and tight.
Okay, let’s just get into it cause you know I can babble.
I’m probably not the only one who feels like this but when it starts to get a litttttle bit nicer outside, I just crave light and refreshing food. Usually I’m a savory breakfast kinda girl but when I want something sweet, overnight oats is my go to.
Over Night Oats - 5sp
1/2 cup old fashioned oats - 4sp
3/4 cup unsweetened almond milk - 1sp
sprinkle of cinnamon - 0sp
1 pack stevia - 0sp
fruit of choice - 0sp
I always start with the same base for my oats and then depending on my mood, I’ll add some fruit. This time it was strawberries and blueberries. I loooooove how versatile these oats are. You can have them every day of the week and never have the same thing twice.
Since the oats and milk are already 5sp, I usually always keep my toppings to 0sp but if you wanted to add some peanut butter or chocolate chips or honey you would probably be in heaven.
Pretty sure you all know how to make these… but just in case you literally just throw everything into a mason jar the night before, shake it up & by the morning they are ready to go. As for the fruit you can add it in at night or in the morning, whatever you like. If I’m feeling fancy, I’ll microwave it for like 30 seconds but honestly they’re just as good cold.

1/2 carton Premier Protein Caramel - 1sp
You guys have seen this coffee a thousand times before, it’s my ride or die once I switch to iced. The best thing about this drink, besides it being so delish, is that it keeps me full all morning. I usually get hungry and eat breakfast around 10, but on the days that I wake up at 5 and go to the gym,I get hungry much earlier. The protein in the coffee definitely silences those hunger grumbles until a bit later.
Like I mentioned with my breakfast, I've been in the mood for refreshing foods lately and what’s more refreshing than a salad, amirighttttt? I feel like at least once a week, whether it be my meal prepped lunches or for dinner, I have a variation of Mexican food. Sometimes it’s tacos, or burrito bowls, or fajitas.. this week it’s a taco salad!
Beef Taco Salad - 5sp
2.5 oz beef - 2sp
peppers & onions - 0sp
black beans - 0sp
corn - 0sp
romaine lettuce - 0sp
2 tbsp salsa - 1sp
1/2 carton wholly guacamole 100 calorie cup - 2sp
I mean, not that I need to explain my Mexican food obsession, but I really looooove the fact that there are so many 0sp foods I can add onto it. The beans, corn and peppers are all 0sp so I really pile them on.
You could definitely find a 0sp salsa to add but the Garden Fresh Screaming Hot Salsa from Wegmans is so delicious I don't mind spending points on it. If you have a Wegmans near you & you’re not a wimp when it comes to spicy food, goooooo get it!!
On this day, I only used 1/2 of the mini guacamole carton but the full thing is only 1 more smart point and on the days I was extra hungry I used the whole thing.
I don’t really think this salad needs any dressing because the salsa and guac mix it together nicely, but if you wanted to add it, go for it. I bet the cilantro dressing from Trader Joe’s would be bomb on this!
The beef is seasoned with sazon, crushed garlic & lime juice, leave it over night or at least a few hours and then sauté it up.
I love salads but often find myself still hungry like immediately after eating one.. but this salad is super filling. I will definitely be having different variations of this over and over again during the summer!
I’ve been kind of in a funk about what to make for dinner, I feel like I was getting bored with all of my recipes. I needed something new and exciting in my life! So…. along came the curry!
Curry Chicken Dinner - 6sp
3 boneless skinless chicken breast - 0sp
1 cup Chef Shaikh’s Hot Curry Sauce - 7sp

3/4 cup jasmine rice - 4sp
peas - 0sp
I’ve walked past the Indian section at Wegman’s probably 97 times and never paid it any mind. One day I decided to stop and take a peak at what they had and I found this Chef Shaikh’s sauce. I know they had a few different kinds but my eyes automatically went to the hot curry.
I’m pretty sure there was a regular one too, not just hot, if you didn't want to clear up your sinuses while you eat dinner. This one is pretty hot but to be honest, I expected it to be a lot hotter… but none the less it’s really freakin delicious.
This is sooooo super easy to make. All I did was cut the chicken into bite size pieces, season with paprika, garlic salt & curry powder, brown the chicken in a frying pan, add it to the crockpot with a cup of the sauce and cook on low for 3-4 hours. I’m sure you could skip the browning step if you were really low on time but I think it adds more flavor.
You guys know I looooove me some jasmine rice and what is curry chicken with no rice, ya know?! Maybe next time I’ll have it with basmati rice to really get into the Indian cuisine.
Next time I go food shopping I’m definitely gonna check out what other sauces they have, my sis requested chicken masala so we’ll see what Chef Shaikh & I can do about that!
My dinner really filled me up, but sometimes you just need a little sweetness to end your night. I bought a big box of these Annie’s fruit snacks at BJ’s and they’re the perfect amount for when I just need to satisfy my sweet tooth.

Not much to say about this guy other than it’s fruity, it’s chewy, & it’s delicious.
