September Soups: Broccoli Cheddar Soup

Oh yes, I'm back again with another delicious (can I call my own cooking delicious?) soup that I'm expecting a lot of you will be happy with! Growing up, my mom used to take my sister and I to Panera Bread every once in a while for dinner. You would think she was taking us to Del Friscos with how excited we were. Every time we went, I got the same thing.. The Broccoli Cheddar Soup that is pretty much perfection in a bowl. My mum found a recipe a year or two ago for it and we've been hooked ever since. No shade to Panera, I'm always gonna be a fan.. But if I can make the soup in my own kitchen, it's just as good, and I can fill up a kiddie pool sized bowl and curl up on my couch to eat it, you bet your ass that's what I'm gonna do!
Here's what you'll need:
*we made a big batch to freeze some, feel free to scale it down if you don't want that much*
- 10 cups of chicken broth
- 2 bags of frozen broccoli
- 1 bag of frozen cauliflower
- 2 cans of Rotel tomatoes
- 1 big block of Velveeta
- 4 chicken bullion cubes
This is probably the simplest soup I've made yet. I honestly thought I was missing something because it was just way too easy. Okay, first throw everything besides the cheese in the pot. While you let all that heat up, cut your cheese into cubes. Once it's nice and hot drop and cheese in and stir until it's all melted. You can leave it like that if you want, but I transferred some of the broccoli and cauliflower with a little bit of broth into the blender and puréed it. This will thicken the mixture a bit and get rid of all the big chunks of veggies. And that's all! You can have this soup ready in like 25 minutes from start to bowl. It's so yummy and super easy.
