Pinterest Fun or Fail: Mexican Street Corn Salad

Hey my loves! 

I know I can't be the only one that spends hours on Pinterest but never tries, makes, or creates what they've pinned. I've recently only been pinning things that I actually plan on trying. Like really, really trying. I plan on writing about all my Pinterest experiences, whether it's fun… or a fail. This will be my first ever Pinterest FUN or FAIL post, let's see how it goes!

I was inspired by this post. I say "inspired" because I never really follow recipes for anything. I always throw something in or take something out. If you came here for measurements… you're in the wrong place. Italians don't use measuring cups. What I made is pretty close to the original recipe but I did tweak a few things. 

This is perfect for summer time. I know we all get sick of the same old stuff (besides Auntie Linda's potato salad). It only takes about 15 minutes so it's perfect for any last minute cookouts you get invited to. 

What You'll Need:

  • corn (I used frozen ain't nobody got time for corn on the cob) 
  • garlic
  • red pepper
  • red onion  
  • black beans
  • cilantro 
  • queso fresco
  • olive oil
  • seasoning (I used cayenne, garlic salt, onion salt, and paprika)
  • mayo
  • plain yogurt
  • limes   

First you want to add some olive oil, the garlic and the corn to a pan. I put it on high and stirred it around every couple minutes. You really want the corn to get charred and a little burnt looking, it gives it a lot of flavor. While that's cooking, cut up your red pepper, red onion, and cilantro. You could throw the red pepper in the pan with the corn and garlic if you want but I just keep it raw. 

Your corn should look something like this. I'm sure it would be even more delicious if you used corn on the cob and grilled it. BUT, I'm lazy! *shrug* So this will do.

Transfer the corn into a big bowl and add in the beans (after being drained), red pepper, red onion, and cilantro. How pretty are all of these colors together?!

Now comes the fun stuff. The dressing is definitely the make or break part of this salad. The post I was inspired by just used plain yogurt as the base. So I figured I'd try that. I put a couple scoops in a bowl, added in the paprika, some garlic salt, some onion salt and some lime juice. But when I tasted it I knew it needed some more kick. I added in some cayenne pepper. That helped a lot, but I still needed something else. All of the other Mexican street corn recipes I had seen used mayo. So I figured, why not? Jackpot! That definitely did the trick. With just a couple small scoops, you will really taste the difference. You can make the dressing as spicy and tangy as you'd like. I personally like a lot of kick to it.

Mix everything together with the dressing and then crumble in some queso fresco. It is not a strong cheese at all so don't be worried to add in a lot! Toss that all together and voila!

Your finished product should look something like this. If it doesn't… eat it anyways, how bad could it be?

This Mexican Corn Salad was definitely a good way to start my Pinterest Fun or Fail posts. It also got the stamp of approval from Mum and Lissie. It was the perfect snack for our lovely beach day!
